I don't think it matters, it's the electrode you need to be worried about.
If you cut on a water table the torch end cap is almost constantly in electrical contact with the workpiece, it doesn't affect the cut performance.

My startrite had a blade welder, but you're supposed to order blades made up for your machine. The blade welder is supposed to be used for splitting and re-joining the blade within a workpiece to cut out internal holes.

Blades are easy, they just run round rubberised wheel, held in place by tension, and can be ordered to your own specification of blade material, tooth setting, length, width, breadth etc. you won't have a problem with those.

You need one with the correct gearing ranges for cutting metal specifically - especially if its for stainless.
Research the correct cutting speed for your anticipated material thickness (you should also buy your saw blades accordingly) and then find a machine with the correct ratios.

Be absolutely rigorous with ensuring the material is clean and laid out precisely before welding.
Use jigs to make as much as you can and hold it fixed while you weld it, remember as a weld cools it will pull the two pieces...
