Being a 4x4 there is a lot more to go wrong, however with some idea of what you're looking at you shouldn't go too far wrong. The 300 Tdi is fairly reliable & simple to work on. Check the cam belt/tensioners have been done (or do it asap if you end up buying it) plus all the usual engine checks...

If you're building a car I would suggest the best machine package you can reasonably afford along with argon/co2 gas. 100e would not offer good enough results imo. You need to consider nothing less than a genuine 160 amps if you plan on making engine mountings or a roll...
If you prefer the Rangie I'd look for a tidy 2.5 manual diesel. The first ones from '95 were fitted with the less powerful M51 BMW unit but if you can run to a later one '97/8 onwards you should be OK imo. Fuel economy is much better than the petrol version too.

30 amps would definatley be more useful & if it's shown on the main website it would probably be safe to assume that the 40 amp spec was indeed stated in error.
It's sometimes difficult to get pure co2 from the pub nowadays as they often use blends that contain nitrogen which is useless for welding. Co2 will work but the money you save on gas you will only spend on grinding discs imo.

It would appear to be lack of shielding which can cause porosity. May sound obvious to some, but Imo double check everything if you haven't already.
Type of gas, type of wire, set up for gas (not gas-less) bottle pressure, reg outlet flow, check all hoses for leaks/restrictions, sip torches...
